About the Role

Reporting to the Executive Chef, this is a unique opportunity for a talented Sous Chef to contribute and enhance food preparation and kitchen operations at the Gabba, delivering innovative and creative food whilst contributing to a team of professionals providing outstanding guest experiences.

As the Sous Chef, you will assist the Executive Chef in overseeing multi kitchen operations at the Gabba, including budgeting, ordering and stock control. The role will require experience with monthly stock takes, aspects of labour management and a can-do approach within the kitchen brigade.  You will supervise all casual kitchen staff, participate in their training and development and provide feedback on their performance.  This role ensures that the kitchen operations comply with all health and safety regulations by adherence to sanitary and safe food handling guidelines (HACCP) at all times. The Sous Chef should also be across new menus, food trends, market dictates and company brand awareness.


 The role involves weekend and evening work therefore a flexible approach to working hours is mandatory. 


About You

You will have substantial experience in providing exceptional Sous Chef services in commercial, multi kitchen venues, and be confident working in a fast paced environment with a proven ability to take initiative and achieve results in a customer focused environment.  

With an ultimate goal of quality, you will ensure culinary dishes are being served efficiently whilst contributing to O’Brien Group Australia’s overall profitability.  Your previous experience will allow you to think on your feet and be proficient in identifying and resolving any challenges that may arise in the kitchen.  

Strong time management and problem solving skills will allow you to take a systematic approach to food preparation and to deliver desired outcomes for the team.  Excellent communication and interpersonal skills will assist you to develop positive relationships with colleagues, contractors and guests.  Your energetic, level headed, and solutions focused approach will ensure that you can deliver across this busy and diverse role.

You will have previous demonstrated experience in a similar sized venue,  managing a mid- week food preparation team and assisting in the event day delivery of outstanding cuisine to our guests.

As the Sous Chef role is an integral part of the Food and Beverage team, it is crucial that you are an effective communicator and comfortable attending departmental meetings outside the kitchen or client meetings as required whilst always maintaining a professional approach. Experience using Outlook, Excel and  Materials Control (MC) would be advantageous.
